- 2 (10 oz.) packages of frozen spinach, thawed and well-drained
- 2 small onions, finely chopped (using a food processor works best)
- 2 1/4 cups of herb stuffing mix (we recommend Pepperidge Farm)
- 6 large eggs, beaten
- 1/2 cup of butter, melted
- 1/2 cup of Parmesan cheese, grated
- 2 teaspoons of garlic salt
- 1 teaspoon of black pepper
Instructions
- Prepare the Spinach: Start by thoroughly draining the spinach. To remove excess water, squeeze the spinach with your hands or press it between layers of paper towels until completely dry.
- Mix Ingredients: In a large mixing bowl, combine the well-drained spinach, finely chopped onions, herb stuffing mix, beaten eggs, melted butter, Parmesan cheese, garlic salt, and black pepper. Mix well until all ingredients are evenly combined.
- Shape the Balls: Form the mixture into 1-inch balls using your hands. Place the spinach balls on a baking sheet sprayed with non-stick cooking spray.
- Bake: Preheat your oven to 350℉ (175℃). Bake the spinach balls for about 20 minutes or until they are firm and lightly golden.
