Ricotta-Stuffed Chicken Rolls: A Cheesy and Delicious Twist on Dinner

Ingredients

– 4 large chicken breasts, pounded thin
– 2 cups ricotta cheese
– 1 cup shredded mozzarella cheese, divided
– 1/2 cup grated Parmesan cheese
– 2 cups marinara sauce
– 1 teaspoon garlic powder
– 1 teaspoon Italian seasoning
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 2 tablespoons olive oil
– Fresh basil, chopped (for garnish)


Instructions

1. Preheat your oven to 375°F (190°C). Grease a large baking dish with olive oil.
2. In a bowl, combine ricotta cheese, 1/2 cup mozzarella, Parmesan, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.
3. Lay the pounded chicken breasts flat and evenly spread 2-3 tablespoons of the ricotta mixture on each. Roll the chicken tightly and secure with toothpicks if needed.
4. Place the rolled chicken in the prepared baking dish, seam side down. Pour marinara sauce evenly over the chicken rolls.
5. Sprinkle the remaining mozzarella cheese over the top. Cover the dish with foil and bake for 25-30 minutes.
6. Remove the foil and bake an additional 10 minutes, or until the cheese is bubbly and golden.
7. Let the chicken rest for 5 minutes before serving. Garnish with fresh basil.
