Ingredients:

  • 1 pork fillet (about 800g)
  • 0.3 lb dried bacon (about 150g)
  • 3-4 pieces of prunes
  • 1 sprig of rosemary
  • 1 tsp whole grain mustard
  • 1 tbsp sweet chili sauce
  • 3 tsp soy sauce
  • Salt, pepper to taste
  • Wooden skewers

Directions:

  1. Remove the silver skin from the pork fillet and trim any excess fat.
  2. Cut the fillet in half lengthwise, then cut each piece in half again.
  3. Make incisions in the thickest parts of the meat to ensure even thickness.
  4. Cover the pieces with cling film and pound with a kitchen hammer until flat.
  5. Season both sides of the meat with salt, pepper, and your favorite spices.
  6. Lay the bacon slices over the meat, then sprinkle chopped rosemary on top.
  7. Wash and dry the prunes, then cut them into small pieces and arrange over the bacon.
  8. Tightly roll the meat and secure with wooden skewers.
  9. Heat a well-oiled pan and sear the rolls over high heat for 1-2 minutes until browned on all sides.
  10. Transfer the rolls to a baking sheet lined with parchment paper.
  11. In a small bowl, mix 1 tsp whole grain mustard, 3 tsp soy sauce, and 1 tbsp sweet chili sauce.
  12. Brush the meat rolls with the sauce mixture.
  13. Bake in a preheated oven at 180°C (356°F) for 10 minutes.
