For the Granola Base:
- 2 cups granola (store-bought or homemade)
- 1/4 cup honey or maple syrup
- 2 tablespoons coconut oil, melted (or unsalted butter)
For the Yogurt Filling:
- 2 cups plain or flavored yogurt (Greek yogurt works best for creaminess)
- 2 tablespoons honey or maple syrup (optional, for added sweetness)
- 1 teaspoon pure vanilla extract (if using plain yogurt)
For the Toppings:
- Fresh fruits (berries, sliced bananas, mango, kiwi, etc.)
- Chopped nuts (almonds, walnuts, pecans)
- Shredded coconut
- Chocolate chips or cocoa nibs
- Drizzle of honey or melted chocolate (optional)
Instructions
1. Prepare the Granola Base:
- In a medium mixing bowl, combine granola, honey or maple syrup, and melted coconut oil. Stir until the granola is evenly coated and sticks together slightly when pressed.
- Line a 12-cup muffin tin with paper liners or silicone muffin cups.
- Spoon about 2 tablespoons of the granola mixture into each muffin cup. Use the back of a spoon or your fingers to press the granola firmly into the bottom and slightly up the sides of each cup. This will form the “crust.”
- Place the muffin tin in the freezer for 10-15 minutes to set.
2. Make the Yogurt Filling:
- In a separate bowl, mix the yogurt with honey or maple syrup and vanilla extract, if using. Adjust sweetness to taste.
3. Assemble the Cups:
- Remove the muffin tin from the freezer. Spoon the yogurt mixture evenly into each granola crust, filling each cup to the top.
- Add your choice of toppings, such as fresh fruit, nuts, or shredded coconut. Press the toppings gently into the yogurt to help them stick.
4. Freeze:
- Place the muffin tin back in the freezer and freeze for at least 2 hours, or until the yogurt is firm.
5. Serve:
- When ready to serve, remove the frozen yogurt granola cups from the muffin tin. Peel off the paper liners or pop the cups out of the silicone molds.
- Let them sit at room temperature for 2-3 minutes to soften slightly before enjoying.
