  • 1/2 medium sweet onion, diced
  • 3 cloves garlic, minced
  • 1/4 cup dry white wine
  • 1 16 oz package frozen chopped spinach, thawed and squeezed dry
  • 1 14 oz can artichoke hearts, drained and coarsely chopped
  • 1/2 teaspoon crushed red pepper flakes (optional for a little heat)
  • 1 8 oz package cream cheese, cubed
  • 1 cup sour cream
  • 1/2 cup freshly grated Parmesan
  • Kosher salt and freshly ground black pepper to taste
  • 1 1/2 cups shredded mozzarella cheese

Instructions

  • Heat the skillet: Warm the olive oil in a 10-inch cast iron skillet over medium heat.
  • Cook the onion: Add the diced onion and cook, stirring often, for 2-3 minutes until the onion becomes translucent.
  • Add the garlic: Stir in the minced garlic and cook for about 1 minute until it becomes fragrant.
  • Deglaze with wine: Pour in the white wine, using a wooden spoon to scrape up any browned bits stuck to the bottom of the skillet. Let it simmer for 1-2 minutes to reduce.
  • Add spinach and artichokes: Toss in the spinach, artichokes, and red pepper flakes. Cook for about 4 minutes, allowing the spinach to wilt and any excess liquid to evaporate.
  • Incorporate cream cheese and sour cream: Stir in the cubed cream cheese and sour cream, mixing well until everything melts together into a creamy sauce, about 5 minutes. Remove the skillet from the heat.
  • Add Parmesan and season: Stir in the freshly grated Parmesan cheese and season with kosher salt and freshly ground black pepper to taste.
  • Top with mozzarella: Sprinkle the top with shredded mozzarella cheese evenly across the dip.
  • Broil to finish: Preheat the oven to broil on high. Position an oven rack about 6 inches from the broiler. Place the skillet in the oven and broil for 3-5 minutes, or until the top is golden brown and bubbly.
  • Serve: Remove from the oven and serve immediately with your choice of dippables like toasted baguette slices, tortilla chips, or fresh veggies.
