- 1 16 oz package frozen chopped spinach, thawed and squeezed dry
- 1 14 oz can artichoke hearts, drained and coarsely chopped
- 1/2 teaspoon crushed red pepper flakes (optional for a little heat)
- 1 8 oz package cream cheese, cubed
- 1 cup sour cream
- 1/2 cup freshly grated Parmesan
- Kosher salt and freshly ground black pepper to taste
- 1 1/2 cups shredded mozzarella cheese
Instructions
- Heat the skillet: Warm the olive oil in a 10-inch cast iron skillet over medium heat.
- Cook the onion: Add the diced onion and cook, stirring often, for 2-3 minutes until the onion becomes translucent.
- Add the garlic: Stir in the minced garlic and cook for about 1 minute until it becomes fragrant.
- Deglaze with wine: Pour in the white wine, using a wooden spoon to scrape up any browned bits stuck to the bottom of the skillet. Let it simmer for 1-2 minutes to reduce.
- Add spinach and artichokes: Toss in the spinach, artichokes, and red pepper flakes. Cook for about 4 minutes, allowing the spinach to wilt and any excess liquid to evaporate.
- Incorporate cream cheese and sour cream: Stir in the cubed cream cheese and sour cream, mixing well until everything melts together into a creamy sauce, about 5 minutes. Remove the skillet from the heat.
- Add Parmesan and season: Stir in the freshly grated Parmesan cheese and season with kosher salt and freshly ground black pepper to taste.
