  • 250g spinach, washed and roughly chopped
  • 4 chicken eggs
  • 100g soft cream cheese
  • 150g hard mozzarella cheese, grated
  • Vegetable oil
  • Salt, to taste
  • Ground black pepper, to taste
  • Dried ground garlic, to taste

 


Instructions

. Preheat the Oven:

  • Preheat your oven to 180°C (350°F).

2. Prepare the Potatoes:

  • Peel and slice or cube the potatoes. Set aside.

3. Cook the Onions and Spinach:

  • In a large skillet, heat some vegetable oil over medium heat.
  • Add the chopped onion and cook until translucent.
  • Add the spinach and cook until wilted. Season with salt, ground black pepper, and dried ground garlic.

4. Cook the Potatoes:

  • In a separate pan, boil the potatoes in salted water until just tender but not fully cooked. Drain and set aside.

5. Prepare the Egg Mixture:

  • In a bowl, beat the eggs and mix in the soft cream cheese. Season with a pinch of salt and pepper.

6. Assemble the Dish:

  • In a greased baking dish, layer the potatoes.
  • Spread the cooked onion and spinach mixture over the potatoes.
  • Pour the egg and cream cheese mixture evenly over the top.
  • Sprinkle the grated mozzarella cheese over the entire dish.
