Full Recipe:

Ingredients:

  • 2 cups milk (500ml)
  • 1/3 cup sugar (70g)
  • 2 eggs
  • Optional: 1 teaspoon of vanilla extract, Chopped nuts or caramel sauce for garnish

Directions:

  1. Heat the Milk: In a saucepan, heat the milk over medium heat until it’s warm but not boiling. If using, add the vanilla extract to the milk.
  2. Whisk the Eggs and Sugar: In a mixing bowl, whisk together the eggs and sugar until well combined.
  3. Temper the Eggs: Gradually add a few spoonfuls of the warm milk to the egg mixture, whisking constantly. This process, called tempering, prevents the eggs from scrambling when added to the hot milk.
  4. Combine and Cook: Pour the tempered egg mixture back into the saucepan with the remaining milk, whisking constantly. Cook over low heat, stirring continuously, until the mixture thickens enough to coat the back of a spoon. This may take about 10-15 minutes.
  5. Chill: Pour the pudding into serving dishes and let it cool to room temperature. Then, refrigerate for at least 2 hours or until set.
  6. Serve: Garnish with chopped nuts or a drizzle of caramel sauce before serving.
