Ingredients

Units Scale
  • Apple Fritter Bread:
    • 3 medium baking apples, peeled and chopped
    • 1/2 cup light brown sugar
    • 1 heaping teaspoon ground cinnamon
    • 1/2 teaspoon ground ginger
    • 1 large egg, room temperature
    • 1/3 cup white granulated sugar
    • 1/4 cup vegetable oil
    • 1/4 cup full-fat sour cream, room temperature
    • 2 teaspoons vanilla extract
    • 1 cup all-purpose flour
    • 1 teaspoon baking soda
    • 1/2 teaspoon kosher salt
  • Glaze:
    • 1 cup powdered sugar, sifted
    • 1 teaspoon vanilla extract
    • 3 tablespoons milk

Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and prepare a loaf pan with nonstick spray or cake release.
  • Prepare the Apple Mixture: In a medium mixing bowl, combine the peeled and chopped apples with the light brown sugar, ground cinnamon, and ground ginger. Toss until the apples are fully coated and set aside.
  • Mix the Wet Ingredients: In a large mixing bowl, whisk together the egg, white granulated sugar, vegetable oil, sour cream, and vanilla extract until smooth and well combined.
  • Combine Wet and Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and kosher salt. Gradually add the dry ingredients to the wet mixture, stirring gently with a rubber spatula or wooden spoon until almost fully incorporated.
  • Add the Apples: Gently fold in ¾ of the apple-cinnamon mixture into the batter. Pour the batter into the prepared loaf pan, then top with the remaining apple mixture, distributing evenly over the surface.
  • Bake: Bake the bread for 50-55 minutes, or until the internal temperature reaches 200°F (93°C) and a toothpick inserted into the center comes out clean.
  • Make the Glaze: While the bread is baking, whisk together the powdered sugar, vanilla extract, and milk in a small bowl until smooth.
  • Glaze and Serve: Once the bread is fully baked, allow it to cool slightly before drizzling the glaze generously over the top. Slice and enjoy!
